Ingredients
1 large red pepper, cut into 1" pieces
1 red onion, peeled and cut into 1" pieces
½ pineapple, cut into 1" pieces
4 chicken breasts, cut into 1" pieces
1/3 cup Sweet & Spicy Brown Sugar Bourbon Sauce, divided
1 Tbsp. Signature Steakhouse Rub & Seasoning
2 tsp. Sunset Seasoned Pepper (Retired)
Instructions
Place chicken in a resealable bag or container. Add half of the Sweet & Spicy Brown Sugar Bourbon Sauce and all seasonings; seal bag and shake gently to mix. Refrigerate at least 30 minutes. Heat BBQ to medium heat. Thread chicken, pineapple chunks, onion and red pepper pieces onto skewers, dividing evenly (discard any remaining marinade). Place kabobs on grill over medium heat. Cover grill; cook 4-5 minutes on each side or until chicken is no longer pink in centre. During cooking brush kabobs
with remaining sauce.
(Kabobs can be prepared in the morning and refrigerated until ready to cook.)
